red velvet heart cupcakes

It doesn’t get more Valentines-ey than red velvet…

IMG_9606

until you make them even more sickeningly adorable by cutting out hearts with pretty pastel frosting peeking through.

Pinterest, I give you my everlasting thanks

IMG_9598 - Version 2

These are as easy as a batch of red velvet cupcakes, a quick slice off the top, and taking a mini heart cookie cutter to it. Tint some frosting (my favorite is the Tiffany blue) and replace the cupcake hat.

I used cake mix AND canned frosting, and I still don’t think they could be any cuter.

Nothing spectacular usually hits me past midnight

But when you combine two hungry foodies, sometimes you’ll be struck by culinary genius that’s as easy as…

and broiling til golden.

Classiest late night snack ever? Coming right up.

berry green smoothie

IMG_0352

Half a year ago, I jumped on the green smoothie train and neverrr looked back

IMG_0341

I still think green smoothies are super easy and reallyreallyreally good. And I am still incredibly proud of myself every time I drink a stealthy smoothie full of spinach that is invisible to your tastebuds.

IMG_0346

The addition of frozen berries to this smoothie adds more fiber, vitamins, and frosty goodness. One thing I was a tiny bit disappointed about? It wasn’t a pretty purple color like I was expecting.

IMG_0339

But I got over it real fast. Make this asap!

IMG_0354

Berry Green Smoothie

1 frozen banana
Handful of frozen blueberries
1 tablespoon peanut butter (I used my homemade pb!)
2-3 handfuls spinach or kale
1 cup almond milk (I like Silk unsweetened vanilla)

Put everything in the blender and blend until creamy.

ganache filled red velvet cupcakes with coconut buttercream

IMG_0875

I’m going to tell you right off the bat, these are resolution wreckers.

IMG_0868

I made these for a friend, just because she’s amazing. I actually can’t tolerate intentionally coconutty things–Samoas are about my limit–but if you can, this frosting is (purportedly) heavenly.

IMG_0872

These are an amalgamation of her favorite things–tender red velvet, sugary sweet coconut, and silky dark chocolate ganache.

You might’ve caught a quick glimpse of kale chips when I talked about my healthy obsession. If there ever was a perfect snack, this would be it.

four-ingredient chewy peanut butter cookies

IMG_1359

Today I’m doing a guest post over at Culinary Couture, so please head over there to check out the recipe!

IMG_1357

These beautiful, crinkly, chewy peanut butter cookies can be in your belly in fifteen minutes or less.

IMG_1329

The best part? They’re SOOO deceivingly simple. Like four ingredients and a mixing bowl simple. And if you don’t mind bumping it up to five ingredients, drizzle some dark chocolate over them for the prettiest little things you ever did see (this is not actually optional).

apple chips

IMG_4021

Prepared sheet pans with parchment paper and set aside.

Slice apples thinly crosswise, using a sharp knife or a mandolin slicer.

Arrange slices on cookie sheets in one layer. Sprinkle lightly with cinnamon if that strikes your fancy! I like them plain.

Bake for about two and a half to three hours, flipping every 45 minutes or so.

Store in an air tight container.
