I don’t know about you, but I could never live without oatmeal. Or chickpeas. Or sushi or quinoa. OR PEANUT BUTTER.
So yeah, I’m not going paleo on you anytime soon.
But my friend Julie is bravely embarking on 30 days of a paleo diet, and even though I’m not about to give up some of my favorite things, I’m ALL there to help cook it!
So there we were, browsing blog after blog after blog. And you know what? There were some pretty damn delicious looking things.
So even though I am not doing anything remotely close to a paleo diet…there’s going to be a few paleo recipes coming your way.
The first thing I made were these chocolate chip cookies, which turned out quite impressive, paleo or not.
Soft, chewy, & chocolatey, plus they’re paleo, gluten-free, and one egg away from being vegan (I’m sure you could do something about that if you have more vegan baking expertise than I do)
When I took that first bite, I was definitely judging. And these definitely passed.
Paleo Chocolate Chip Cookies
- 1 and 1/2 cups blanched almond flour
- 1/2 tsp baking soda
- scant 1/2 tsp salt
- 1 tsp cinnamon
- 1/4 cup coconut oil, melted
- 1/4 cup maple syrup
- 1 egg
- 1 tsp vanilla
- 3/4 cups dark chocolate, chopped
Preheat oven to 375 degrees.
In a medium sized mixing bowl, combine dry ingredients.
In a small mixing bowl beat eggs, maple syrup, and vanilla extract with a hand mixer.
Pour wet ingredients into dry and beat with hand mixer until combined.
Melt coconut oil, pour into batter, and continue to blend until combined. Stir in chocolate chunks.
On a parchment lined baking sheet, drop balls of cookie dough, about a tablespoon in size. These don’t spread much, so flatten them slightly.
Bake for 10-12 minutes.
If this is paleo? Sign me UP.

I’m wondering if I could sub honey for the maple syrup?

I’m sorry. I hate being ” that person” but I am in the process of making these cookies now and it’s not wet enough to make a dough. It’s still very dry .. Did you miss an ingredient when posting? I’ve gone over the recipe I went by a few times and still can’t figure out why it’s still flour form :(
I don’t know why that would be happening…I”m pretty sure all the ingredients are there. I adapted it from here http://www.primalpalate.com/blog/chocolate-chip-cookies/ and it is pretty similar, I just checked!
Normally I would tell you to add some almond milk or milk but that isn’t paleo

yep you can normal almond flour!
also do i have to use a hand mixer? can i use a fork?
you can use a fork, it’ll just be a little more work! make sure all the ingredients are evenly dispersed, and they’ll be fine!
how many cookies does it make? im sorry i just keep thinking about questions :x
I don’t remember exactly how many it made, but it was a pretty small batch. It might have been around 6-10 cookies? No worries and don’t apologize! i don’t mind questions haha
