Starting out the new year with something nutritious! This is the chocolate counterpart to the pumpkin pie chia seed pudding. Try this healthy treat to ease yourself into the new year!
Chocolate Chia Pudding
1/2 cup any milk (I used unsweetened almond milk)
2 tbsp cocoa powder
2 tbsp chia seeds
Sweetener: 2 large Medjool dates, pitted OR Stevia OR 1 tbsp maple syrup or honey to taste
optional: vanilla extract
Add milk, cacao powder and chia seeds to any container with a tight lid (I prefer glass). Whisk well or stir vigorously with a fork until well mixed. Refrigerate for at least 4 hours or overnight.
Add soaked chia mixture along with dates to a small food processor or a powerful blender. Process until very smooth. If the mixture is too thick, add almond milk by a tbsp to help things move. Be careful not to add too much otherwise the mousse will be runny. Transfer to a serving glass or dish.
Serve chilled. Refrigerate for up to 2 days.
