Well then you have this recipe.
This is perfect in so many ways. Full of healthy ingredients but insanely deceiving. It tastes like the best frosty fudge. So chocolatey and satisfying. Bonus: We all know how terrible turning on the oven in the summer is! This solves all your summer chocolate problems.
Healthy Black Bean Chocolate Freezer Fudge
14 oz can black beans, drained & rinsed
13 Medjool dates, pitted
1/4 cup applesauce, unsweetened
1/3 cup cacao powder
3 tbsp coconut oil, melted
1 tsp pure vanilla extract
1/2 tsp salt*
Optional: dark chocolate to drizzle on top, or any other toppings!
In a powerful blender (I used a Vitamix) or food processor, process all ingredients until very smooth.
Pour into lined with parchment paper 8″ x 8″ square dish.
Level with spatula, drizzle with chocolate (optional) and freeze for at least 3 hours. Cut into 16 squares and enjoy.
*I used 1/2 teaspoon salt with canned black beans from which I rinsed the sodium off, and I thought that was the perfect amount. If you cook your own beans, then you may need 1 teaspoon of salt.
