Healthy Homemade Peanut Butter Patties! AKA TAGALONGS :)

I totally meant to post these back when it was Girl Scout cookie season…but clearly it is now many months past that.

You can thank my stupid school taking over my life (my go-to excuse).

Anyway, these cookies are as phenomenal as they look. These are everything you love about peanut butter patties but way better! Everything is better when it’s homemade and healthy. This I know.

Healthy Homemade Peanut Butter Patties

Soft cinnamon cookie base
3/4 cup rolled oats
1/4 tsp baking soda
1/8 tsp salt
3 T + 2 tsp brown sugar or coconut sugar
1/2 tsp cinnamon
1 T melted coconut oil
1-2 T milk of choice (start with 1 tbsp)

Blend everything except coconut oil & milk in a food processor or high powered blender, until finely ground.
Pulse in the oil and milk until incorporated.
Shape into 8 balls and place evenly spaced on a cookie sheet lined with parchment paper or Silpat. Flatten the dough to make the base of the cookie in the shape you want – it will barely spread while baking.
Bake 13-15 min at 325 F, and let cool on the sheet for them to crisp up.

Peanut butter filling
1/2 cup peanut flour (I used ProteinPlus)
3 T unsweetened almond milk
2 T brown sugar or coconut sugar

Stir together until combined.

*Alternatively, you can use a heaping 1/2 cup of regular peanut butter + 2T powdered sugar (or try sweetening it with a natural sweetener like honey or coconut sugar and let me know how it goes)

1/4 cup chopped dark chocolate
1/2 T coconut oil

Melt together until smooth.

Assemble: Divide the peanut butter filling among the cookies. Use a spoon to drizzle the melted chocolate on top!
