cookie for one

Whenever I bake something, my friends usually know, because I share it with every lucky person in the vicinity. Mostly because I love brightening people’s days with my cupcakes and brownies and treats…but I also can’t deny that I have as much self-control than the next person (read: not very much), which could translate into very bad consequences if I have a fifty tantalizing cookies tempting me in front of my face.

This is where this soft little oatmeal raisin cookie comes in handy.

Or perhaps chocolate chip is more your style?

These are singly baked cookies, adapted from Chocolate Covered Katie. I’ll admit that these aren’t the decadent, buttery, sugary cookies that you’d normally find (in which case, make these instead), but they are pretty healthy, so if you are craving just a few bites of a sweet treat, try this out!

Chocolate Chip Cookie for One

5 level teaspoons flour (15g)
1/16 tsp baking soda
1/16 tsp salt
2 tsp vegetable oil
1/4 tsp vanilla extract
a little nondairy milk, if needed
handful chocolate chips
1 tsp brown + 1 tsp white sugar

Oatmeal Raisin Cookie for One

5 level teaspoons flour (15g)
3/4 teaspoon quick oats
1/16 tsp baking soda
1/16 tsp salt
2 tsp vegetable oil
1/4 tsp vanilla extract
a little nondairy milk, if needed
handful raisins
1 tsp brown sugar
pinch of cinnamon

Preheat the oven to 350 degrees. Combine dry ingredients, then add wet and mix with a fork. Don’t add water. Form into a big cookie and smush. (Or make two little cookies.) Cook for 7-8 minutes.

*Note: I tried using applesauce in place of the vegetable like I normally do, but it made the cookie VERY cakey and gummy.

  1. These look so good, especially the oatmeal one! I do cupcakes for two, but I’ve never tried a cookie for one.

    If I don’t have people to give my baked goods away to, I usually just bake enough of the dough to take a pic for the blog, and roll the rest of the dough into balls and freeze it! Then you can pull out the dough balls and bake up as needed :)
