My newfound love for coconut flour continues!
Just as soft and delicious as the bars I made last, these donuts come together in about 5 minutes flat. I drizzled them with chocolate, which tasted fantastic and makes them very photogenic…but if I didn’t care at all about taking pretty photos, I would have totally covered them in cinnamon sugar :)
Coconut Flour Cinnamon Mini Donuts
Adapted from
1/2 cup coconut flour
1/8 teaspoon baking soda
3/4 teaspoon baking powder
1/2 teaspoon cinnamon
dash of nutmeg
1/4 cup coconut sugar, brown sugar, or granulated sugar
2 eggs, room temperature
2 tablespoons coconut oil, melted (or oil of choice)
1/2 cup warm water
Preheat oven to 350 F.
In a bowl place all five dry ingredients into bowl and whisk together. Set aside.
Next whisk together sugar, coconut oil, and egg until well combined. Add in dry ingredients, stir until evenly combined.
End with adding in your warm water to the batter and stir until smooth and combined.
Spray your mini donut pan and scoop your donut batter into each mini donut ring. I like to pour my batter into a ziploc bag, cut the corner off, and pipe it in.
Bake for 10-13 minutes.
Drizzle with chocolate OR very lightly coat each donut in coconut oil spray and toss in cinnamon sugar.
I cannot wait to try these. My daughter’s Valentine’s Day Party will celebrate with doughnuts this Friday. She will celebrate with these yummy doughnuts since she has to be egg free GF, DF. I will use a flax egg and she will be smiling. Thanks for this post!

Will this work with a reg size donut pan also. And would the cook time be different
Yes, it would work with a regular sized donut pan, and the cook time would be slightly longer. However, I’ve never tried that so I cannot advise you on how long! I would keep an eye on it every couple minutes. I’d love to hear back on how it goes if you try it!
Can I make these into muffins if I don’t have a donut pan?
I think you could, but i can’t vouch for it because i’ve never tried it! if you try it, please report back on how it turns out! :)

I’m not sure! I’ve never tried flax eggs before, and in a coconut flour recipe, the eggs play an especially important role! Sorry I can’t be of more help–if you try it, please let me know how it goes!

I’m sorry Bianca, I’ve tried with real eggs, and it didn’t work either. They remain mushy even if I let them more time in the oven. Is the water mandatory? because when I add it, the batter become too runny. I use homemade coconut flour. Thanks again for your help!
Coconut flour is super touchy–and it really depends on the brand that you use. I have had success making them with the Trader Joe’s brand of coconut flour. I would follow the recipe exactly to get the best results!

I have never tried this recipe with flax eggs, so I can’t guarantee good results. Real eggs are crucial when using coconut flour. Please let me know!

How many donuts does it make?

Excellent. My husband even liked them ( he doesn’t like anything with low cal, low carb, etc). Can you tell me the calories in these? Our group First Place 4 Health will really enjoy these.
Glad to hear that you both liked them!!! I don’t always calculate the nutritional info, but you can easily plug it into an online calculator!
I used apple juice concentrate in place of the water. Worked great. Made in a regular donut pan took about 20 min. Yummy.
