healthy zucchini bread muffins

I was lacking a simple, healthy, easy zucchini bread recipe on here. Until now!

Healthy Zucchini Bread Muffins

1 and 2/3 cup flour (I like to use half whole wheat, half all purpose OR all white whole wheat pastry flour)
scant 1/2 cup raw coconut sugar OR granulated sugar
1 teaspoon ground cinnamon
a few shakes of nutmeg
1 and 1/4 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 and 1/3 cups shredded zucchini
1/2 cup milk of choice (I used almond milk)
2 tablespoons oil of choice (I used coconut oil)
2 tablespoons honey
1 large egg
1 tsp vanilla
1 tablespoon sugar
1/4 teaspoon ground cinnamon

Preheat oven to 400° F.

In large bowl, whisk together the dry ingredients (flour, sugar, spices, baking powder, baking soda, salt).

In a small bowl, stir together zucchini, milk, oil, honey, and egg.

Make a well in center of dry mixture; add wet mixture, stirring just until moistened.

Spoon batter into 12 muffin cups coated with cooking spray.

Combine 1 tablespoon sugar and 1/4 teaspoon cinnamon; sprinkle over tops of muffins.

Bake at 400° for 15 minutes or until golden. Remove from pans immediately; cool on a wire rack.
